The Atlantic Hotel and Ocean Restaurant is delighted to present an extraordinary culinary event featuring Michelin-starred Chef Hywel Jones, in collaboration with Ocean Restaurant’s Executive Chef Will Holland, on Friday, 15 November 2024.

Hywel Jones, renowned for his exceptional work at Lucknam Park Hotel & Spa, will join Will Holland for a carefully crafted fine dining experience. The event promises an unforgettable evening, blending the best local Jersey ingredients with Hywel’s refined culinary techniques.

In anticipation of the event, Hywel shares his thoughts on the collaboration and the inspiration behind the dishes he’s created for this exclusive menu.

Could you share the inspiration behind the menu you’ve created for your collaboration with Ocean Restaurant?

“It’s always an honour when another chef invites you into his or her kitchen to cook alongside them. When Will asked me if I’d like to cook with him in Jersey, I was naturally delighted. We looked at the menu and divided the various courses between us. The dishes I’ve chosen to prepare represent what my philosophy on food is: the best quality ingredients, seasonal and local where possible, and prepared in a respectful way to allow the ingredients to take centre stage. I am particularly looking forward to using the delicious Jersey crab in one of my first courses, and I am equally as excited to bring a small taste of Bath and a little bit of South West history in the Bath Chap fritters course to the Ocean Restaurant.”

What are some defining moments in your career that have shaped the way you cook today?

“I’ve been very fortunate in my career to have been moulded and influenced by some great chefs and mentors. From first stepping into a tiny kitchen in Cardiff with Gilbert Viader, where it was just him and myself in the kitchen and his wife running the front of house, to moving to London where the brigade was eighty-plus chefs, then working in one, two, and three Michelin star restaurants. I’ve taken bits from each and every one of them which has helped shape the way I cook today. As well as the cooking aspect, I think a huge part of being a chef is also about how you manage, mentor, and inspire your team. This plays a huge part in how a chef cooks as you rely so much on your team.”

What did you find most exciting about collaborating with Executive Chef Will Holland and the team at Ocean Restaurant?

“I’ve known Will for quite some time now and have been fortunate to eat his food on several occasions, first in Ludlow and later in Pembrokeshire, and each time has been a real treat. We have also cooked together at various charity events, which have always been great fun. I’ve followed Will’s journey in Jersey and am very much looking forward to cooking alongside him and his brigade once again, and also visiting Jersey, somewhere I’ve not been before.”
