The Atlantic Hotel’s Mark Jordan inspires peers as cover star for exemplary Chef Masterclass

Mark Jordan, Executive Head Chef of The Atlantic Hotel and sister restaurant Mark Jordan at the Beach has been celebrated for his innovation and impressive technique in The Caterer magazine, the ‘bible’ for hoteliers, restaurateurs, chefs and all those involved in the British hospitality industry.

 

Featuring on the cover of this week’s magazine, Mark was hand-picked to present a Chef Masterclass, a step-by-step walkthrough recipe for his famed fish pie from Mark Jordan at the Beach and acclaimed in the feature for ‘elevating this humble dish to a new level’ thanks to his skill and the outstanding seafood in Jersey.

 

Also featured was Mark’s Lobster, Mango and Jersey Royal Salad, one of his signature dishes at the Michelin starred Ocean Restaurant at The Atlantic Hotel. This indulgent dish was highly praised by writer Michael Raffael who commented that ‘the variety of textures and their presentation have a powerful display element. But as well as a strong visual impact, they also carry a subliminal message: this dish is complex, and it has taken several cooks a lot of time to create before it’s ready to serve to the customer.’

 

Together, the fine dining and bistro-style dishes were acclaimed as examples of Mark’s creativity and skills as a ‘showman’, distinguishing him as a talent that ‘can dress a Michelin-starred plate to convince the inspectors, but can also make a fish pie attractive to the most discerning Jerseyman.’
